Subject. Optimum conditions for obtaining inverted syrup with a content of reducing substances of more than 95% DM from sugar syrup by decomposition of sucrose with the help of the enzyme preparation β-fructofuranosidase. Purpose. Development of a technology for the production of inverted syrup for feeding bees with a dry matter content of 70–71% and a mass fraction of inverted sugar over 95% of DM. Methods. Electrometric, refractometric, photoelectrometric, titrometric, conductometric, copper-citrate methods of analysis were used in the work. Results. An analysis of the known methods of obtaining invert syrups was carried out, as a result of which the enzyme hydrolysis method was chosen for the development of the syrup production technology for feeding bees. The influence of the temperature and pH of the syrup on the catalytic action of the enzyme preparation was tested. Optimal conditions for the hydrolysis process have been established. The amount of enzyme needed to obtain syrup with a given content of dry matter was determined. Laboratory samples of invert syrup were produced. The main physico-chemical parameters of the obtained product were checked, which confirmed its high quality and safety. Technological instruction, technological and equipment schemes for the production of invert syrup have been developed. The technology for the production of syrup for feeding bees has been implemented at Novoorzhitskyi Sugar Refinery LLC. Scope of results. The developed technology can be implemented in sugar factories and other enterprises of the food industry. The produced invert syrup can be used in beekeeping, as well as in the food industry.
