Program of enhanced phage monitoring

It was held a monitoring study of 156 samples of different dairy products for the presence of lactic acid bacteria phages. These samples were obtained from 10 different dairy plants. It was defined that 73% of the samples were contaminated by bacteriophages of lactic acid bacteria of different taxons. It was established a positive correlation (rs = 0,78, n = 10, p < 0,05) between indicator Сф, that shows species-specific phages number and contamination coefficient Kk. So, detection of different by their specificity phages tells about object’s dangerous phage contamination regardless of its contamination level. A risk factors (phages accumulation sources) analysis was done. It was shown that raw materials and air by 1,5 and 2,2 times, respectively, were more polluted with phages than equipment.Downloads
