Abstract

Subject. The successful operation of Ukraine’s sugar beet industry depends on the quality and storage conditions of the raw material. Under storage the biochemical processes that take place in sugar beet after harvesting, and the conditions under which it is stacked in piles for long-term storage, is one of the key elements in managing sucrose losses in sugar production. Objective. The aim of the research was to investigate the biochemical processes occurring in sugar beet during storage and throughout long-term storage in piles, and to predict the impact of biochemical and microbiological parameters on the storage process and production management. Methods. To determine the changes occurring in sugar beet, observations were made of their storage in piles over a period of 15 days. The focus was on biochemical processes and the development of pathogenic microflora. Results. A study was conducted on the conditions for storing sugar beet; the characteristics of the beet piles and the climatic conditions during storage are described. The influence of pathogenic microflora on storage conditions and processing was examined. Changes in temperature and sucrose content were monitored during the observation period. The total sucrose losses during the storage period and the transport of beets to the processing plant are presented. Methods are described for treating beetroot with chemical reagents prior to storage and to reduce unaccounted-for sucrose losses. Scope of the results. The observational data obtained can be used by sugar factories to optimise post-harvest storage of sugar beet, predict storage duration and monitor the rate of pathogenic microflora development, thereby preventing or minimising unaccounted-for sucrose losses in sugar production.
