INFLUENCE OF PRICES AND INCOMES ON THE LEVEL OF CONSUMPTION OF MEAT AND MEAT PRODUCTS IN UKRAINE

Subject. Influence of prices and incomes of citizens on the level of consumption of meat and meat products. Purpose. To investigate the influence of prices and incomes of citizens on changes in the consumption levels of meat and meat products in the context of ensuring food security of Ukraine. Methods. The article uses general scientific and special methods: dialectical, systemic generalization, economic-statistical – for processing and analyzing statistical data; graphical and tabular – for visualization and generalization of research results; abstract and logical – for formulating conclusions. Results. The article analyzes the sufficiency of meat and meat products consumption and its economic availability in Ukrainian households depending on the place of residence, age and gender, average per capita income of the population. Using food security indicators, the author evaluated the general sufficiency of food consumption and economic availability of food for the population of Ukraine. The article examines the influence of prices and incomes of citizens on the consumption of beef, pork and poultry in the period from 2007 to 2021. The results of research indicate that the demand for a product that already has a high cost decreases with a further increase in its price. Moreover, consumers replace expensive product with its cheaper counterparts. Demand for food products of medium and low cost increases with a reduction in their prices and an increase in the prices of more expensive products. The income of the population also has a significant impact on consumption. Food consumption is growing and becoming more diverse with increasing purchasing power of the population. Scope of results. Research results have a scientific and practical nature and can be used by scientists in further studies. The results can serve as a source of reference information and be used in the work of economists, government specialists, researchers, teachers, graduate students and students of higher educational institutions.
