PROMISING AREAS FOR THE USE OF CHLORELLA MICROALGAE IN THE TECHNOLOGY OF HEALTHY FOOD PRODUCTS

Subject. A stable trend is the inclusion of non-traditional ingredients in food formulations, which not only diversify the range of foods, but also often have extraordinary value in terms of increasing their nutritional value. These non-traditional ingredients include microalgae, which are a new promising source of food protein and other essential components. So, the subject of this article is to substantiate the possibility and feasibility of using microalgae in food technology. Purpose. Rational understanding of the scientific, technical and technological issues of combining microalgae biomass with traditional ingredients in food products, in particular meat ones, will provide the said products with functional properties and expand the raw material base of the meat industry. Green microalgae fully meet the above goals, since they have a balanced amino acid composition, as well as a significant content of vitamins, macro-microelements, fatty acids, pigments, etc. Thus, the addition of microalgae to the composition of meat product recipes will provide physiologically complete nutrition, help preserving the health of consumers, maintaining their high performance, proper body resistance to infectious diseases and other negative environmental factors. Methods. The research was based on the principles of a systematic approach to scientific and professional sources, the results of previous studies; methods of cause-and-effect analysis, methods of logical generalization of research results and formulation of conclusions were used. Results. A review of the literature showed that the commercialization of microalgae is gaining momentum in Asia, the USA, and Europe. Food manufacturers are gradually expanding the use of microalgae to meet consumer demand for functional foods. Scope of results. Microalgae are a concentrated source of proteins, fats, carbohydrates, vitamins and minerals that are essential for the human body. Therefore, they can be used as ingredients in the production of healthy foods and consumed as dietary supplements.
