Research of the retentate and permeate physical and chemical composition during ultrafiltration of the cheese milk whey

A study of changes in physical and chemical composition retentatu and permeate during the ultrafiltration of whey pidsyrnoyi in industrial conditions. Components of retentatu, indicating that during the ultrafiltration mass fraction of protein in it is increased to 17 times the mass fraction of solids – almost 3 times, and the mass fraction of fat 9 times. It found that the mass fractions of lactose and minerals not increased significantly. The regularity abovementioned change in the permeate. Determined that the solids content increased by 1.38% lactose – by 1.0%, ash content – on 0,18%, protein – by 0.21%. Based on the data obtained can provide further application retentatu and pemeatu in the dairy, confectionery, meat and bakery industries.
