The effect of partial replacement of sodium chloride to potassium chloride in the ratio of 3:2 on the growth cultures of Penicillium candidum and Geotrichum candidum has been investigated, the sensitivity of these cultures to different salt concentration has been studied. The information received will be taken into account in the manufacture of cheese with a white mould.
