Investigated the microflora of kefir fungi, fungal kefiric starters and kefir from different manufacturers. Removed 171 strain laktokokiv and lactobacilli species and subspecies represented S. thermophilus, L. lactis ssp. lactis, L. lactis ssp. diacetіlactis, L.mesenteroides ssp. mesenteroides, L. lactis ssp. cremоris, L. delbrueckii ssp. bulgaricus, L. acidophilus, L. lactis, L. helveticus, L.casei ssp. caseі, L. plantarum, L. kefiri, L. brevis.
