Essence of HACCP system in the contemporary ecological and economical terms of manufacturing safe foods

Abstract

Features of the ecological and economic conditions put Ukraine in implementing the requirements of food production systems that would ensure quality and guarantee different levels of product safety. It is known that the environmental state of our country makes to focus on factors such as the quality of raw materials, monitoring of storage and processing. Increasing quality requirements are accompanied by effective economic ectivityi. The question of technology production and processing of agricultural raw materials and quality regulation at different stages of the process are given in the article. The ways of regulation by the implementation of technological stages of production and processing of agricultural products are shown.
