Abstract

The experience of thermal processing of products, related to two parameters such as temperature and time, is also used to some extent with regard to the preparation of packaging, packaging materials, packing, and the like. Obviously, from this point of view, information on the action on the microorganisms of vegetative and spore forms of various physical and chemical influences or combinations thereof is important. This article provides a comparative analysis of the advantages and disadvantages of carbonated beverage glass and PET packaging technologies. The main advantages of glass containers include complete inertness to food and beverages, cheap natural raw materials and traditional technologies for its manufacture, the possibility of using high pressures during packaging, including the benefit of achieving aseptic conditions. The advantages of PET packaging technology include the possibility of extending the pressures and temperatures of the packaging towards increasing the latter. First, such opportunities are opened in connection with the mechanical strength of polyethylene terephthalate and its products, as well as in the absence of thermal stress. Laboratory studies of PET bottles of 1.0, 1.5 and 2.0 liters have shown that they can withstand internal pressures of up to 1.3 MPa without noticeable residual deformation. This pressure indicator is much higher than the similar characteristic of glass containers. Secondly, increasing the pressure of packing allows, in the conditions of maintaining equilibrium in the gas-liquid system, to increase the temperature of the medium, which is in accordance with the law of solubility of gases. Exactly the compliance of pressure and temperature parameters with the normative value of CO2 content can be ensured by different combinations.
