Abstract

The establishment of quality management systems of the 60's and of safety management systems since the mid-2000-s is analyzed in the article. The transformation of the concepts of management of quality from the last century is also analyzed. The peculiarities of the transition from Soviet standards, as the embodiment of the post-Soviet system of state control in every enterprise, to technical regulations and full responsibility of producers for the products on the market and the responsibility of state for the compliance with safety requirements are revealed in the article. Attention to the private standards developed by trade-food structures, that provide the level of safety and quality of agricultural products and foodstuffs, that exceeds generally accepted is paid. This is perspective version of introduction of the European model of food safety in Ukraine.
