WAYS TO IMPROVE THE MARKET OF BAKERY PRODUCTS OF UKRAINE

Abstract

The aim of the study was to determine the bakery market status and the main problems of its activity. The structure of market proposition is analysed; including not only food industry enterprises, but also the non-industrial sector e.g. retail chains, privately owned bakers, fast food producers with baking products, self-sufficiency of some inhabitants. The current state of determination of the volume of "illegal" bread market and its own approaches were considered additionally. It is compared to the dynamics of the bread and bakery products market according to different approaches – normative, industrial, in accordance with the actual consumption of products in both physical and value terms. It was revealed that the market dynamically increased by the volume of sales of bakery products by industrial enterprises and decreased, respectively, by the volume of their industrial production. The ways to improve the bakery products market, which include additional measures to ensure its transparency, quality and safety of bakery products, strengthening of market infrastructure and development of rural territories, etc. are offered below.
