Анотація

На сьогодні структура харчування людини зазнала суттєвих змін, що пов'язано із незбалансованістю харчування, а саме: вживання в їжу рафінованих вуглеводів, трансжирів, недостатньої кількості повноцінного білка. Крім того, надто швидкий темп життя населення у містах, хронічні стреси, застосування антибіотиків, погіршення екологічної ситуації та інші фактори негативно позначаються на здоров’ї людини, знижують імунітет, призводять до хронічних захворювань.Тому пріоритетним напрямком у харчовій промисловості, і в тому числі молочній галузі, є розробка технологій функціональних продуктів. Морозиво користується великим попитом серед дітей та різних верств населення і з кожним роком його асортимент розширюється. Враховуючи високу харчову цінність традиційних видів морозива, є необхідність розроблення нових різновидів цього продукту, що відповідатимуть вимогам сучасних тенденцій харчування. Метою роботи було провести системний аналіз існуючої інформації та останніх досліджень щодо виробництва функціональних продуктів та застосування у технології морозива інгредієнтів функціонального призначення із використанням сучасних нормативних й аналітичних джерел. Здійснено аналіз сучасних нормативних й аналітичних данихв світі та Україні щодо виробництва функціональних продуктів, видів функціональних інгредієнтів та застосування їх у технології морозива. Відмічено, що наразі важливим напрямом розвитку в індустрії збитих заморожених десертів є створення морозива із функціональними інгредієнтами з низьким вмістом жиру і цукру. Отримані результати пошукової роботи будуть використані у розробленні технології низькокалорійного молочного морозива з використанням у складі рецептур функціональних інгредієнтів тваринного та рослинного походження
